Skinny Banana & Date Ice Cream

This weekend has been about a thousand degrees in London so we needed something cooling. I love ice cream, but it's not too kind on the old waistline. This recipe clocks in around 250 calories per serving, and with big chunks of date and a rich creamy consistency, I guarantee your guests won't tell the difference between this and the real stuff. 


To make you will need:  
Serves 2
2 large ripe bananas
4 large medjool dates
Dash of semi-skimmed milk 

Chop your bananas, then de-stone and chop your dates. Pop into a freezer bag and leave until solid (overnight is probably best).
Put all your frozen pieces into a blender and blitz into a creamy frozen paste. Adding the milk here loosens it all up a bit to make it easier - it takes a few goes and a bit of stopping and starting, but it's worth it. 



Dollop your mixture into a freezable plastic bowl or tub and pop back in the freezer for an hour. Pull it out and stir it all up to break up any crystals and pop back in until you're ready to eat it.






Serve in some pretty bowls with a sprig of mint as a deceptively healthy snack or dessert to satisfy those sweet cravings.
