Tomasz's stuffed peppers

So tonight my sweet Polski boyfriend said he would cook us dinner, and cook for us he did. He made delicious stuffed peppers with piri piri beef, and topped with oozy buffalo mozzarella. 
We served them with a simple salad and avocado - you don't really need anything like potatoes as they are really filling. We were stuffed (excuse the pun). 
You will need (serves 2)

3 large peppers
Pack lean mince
1 onion
Herbs of your choice
Pack buffalo mozarella
Bunch parsley
Piri Piri dressing
Salad to serve

To make, you probably want a large pepper each (plus an extra one for the odd half for hungry boys!) We used red and green, but I do prefer red for their sweetness. 
Half the peppers and remove the pips and cut any white bits of flesh off. Drizzle a little oil over and pop in a preheated oven for about 20 minutes while you cook your filling. 
In a pan, drizzle some more good olive oil and gently fry the onion. Tomasz took an experimental approach with the herbs he added, so I'm not sure what actually went in there, but there was definitely some parsley and oregano as well as a good pinch of rock salt and ground black pepper. 
Then he added the mince and fried until all cooked and lovely. At this stage he thought it was missing a little something, so he added some Piri Piri sauce (well, actually it was salad dressing, but it tasted great anyway!) 
Let it all bubble and sizzle away until it's cooked through and not too wet. 
Grab your peppers from the oven, which should be soft and squidgy with slightly crisp edges. 
Spoon your mixture into each pepper half, and top with a big slice of milky mozzarella and a sprinkle of fresh parsley. Pop back into the oven for 10 minutes until the cheese is all melted, and serve! 
Tomasz has a very smug look on his face now...
